Lipids constitute a large and heterogeneous group of organic substances soluble in non-polar organic solvents. In addition to being excellent sources of energy, they perform various physiological functions: they become part of the cytoplasmic membrane and some of them exercise particular biological activities in the form of vitamins and hormones. Fats and oils are very similar, in fact they are both commonly called fats or glycerides; however, they differ in their physical state at room temperature.
