Taurine is a sulphur amino acid not incorporated in macroproteins, but present as a free amino acid or as a constituent of small peptides; it is an amino acid present in products of animal origin and not present in the plant kingdom. Taurine is used for the conjugation of bile acids, retinal and myocardial function and for reproduction.

Most mammals are able to synthesise taurine from methionine and cysteine during normal metabolism of sulphur amino acids; cats, on the other hand, have limited synthesising ability, associated with a high metabolic need for the formation of bile salts, making it the only species that suffers from taurine deficiencies.
